We make the best wholegrain artisan pasta derived from farro (triticum dicoccum). We also create various tasty dishes with farro, such as farro mixed with precious organic legumes, cereals and vegetables cultivated directly by us.
Our products are stone grounded and our manufacturing process uses solely renewable energy. The stone grinding process ensures the transfer to the flours of all the nutritional properties of the grains. In this way we obtain wholegrain organic flours full of primary nutrients.
This is the reason why we have become leading producers in Italy of Farro, wholegrain flours and artisan pasta derived from ancient cereals and legumes. We create artisan fusilli, spaghetti, strozzapreti, orecchiette and other types of pasta, all dried at low temperature using bronze dryers. Then the pasta is packaged and processed in protective atmosphere, in order to maintain its freshness and taste over time.
The delicacy of the ingredients and the craftsmanship of our pasta deserve a specific attention while cooking, in order to maintain its consistency. Therefore, we suggest to shorten the cooking time and to use little salt, as this will also preserve in full the nutritional properties of our products.
