January is a cold and long month, for many of us also tedious. That’s why today we would like to propose you a dish full of vitamins, nutrients and fibers to support your mind and body.
The recipe is simple but incredibly tasty: organic wholemeal farro spaghetti (Luzi production under Conad brand) with pumpkin, zucchini and sage creamy soup.
It’s not easy to start again after the holidays, after family and friends time, walks and naps. This is why it is so important to help your body and mood rebalancing the day-to-day life through an healthy and tasty diet.
During this time of the year, we are preparing our fields in central italy, in order to strenghten the plants for the coming spring. And while we attend this to happen, we enjoy the products we have previously collected becoming delicious food on our tables.
Prior to presenting you this delicious recipe of organic wholemeal farro spaghetti with pumpkin, zucchini and sage creamy soup, we would like to remind you that our flours are stone-grounded using a mill machinery moved by solar energy and that our pasta is bronze drawn.
Organic wholemeal farro spaghetti with pumpkin, zucchini and sage creamy soup.
Ingredients for 4 people:
- 300 grams of fresh pumpkin;
- one potato;
- half an onion;
- two fresh zucchini;
- a sprig of sage;
- 500 grams of organic wholemeal Luzi Spaghetti;
- extra virgin olive oil;
Wash and chop into pieces the fresh pumpkin, slice the onion and put them in the frying pan with extra virgin olive oil. While cooking at low temperature, add sliced zucchini and pieces of potatoes.
Cook the ingredients for about 30 min. Once you have flavored it at your desire with salt (or food-grade baker’s yeast) and pepper, turn off the heat and let the vegetables cool down. On a side frying pan, fry thin strips of sage with extra virgin olive oil or margarine.
Meanwhile, take the food mill and seep through the cold vegetables. Then place the resulting vegetables mix on the fire, in order to let the excess of water to dry. Subsequently, add the strips of sage. Boil the water with salt, then cook the organic wholemeal Luzi Spaghetti and season it with the vegetable sauce prepared.
